Day 21 - a recipe

This recipe is borrowed from Kraft Canada, and is a big favorite in our home.

Creamy Rice, Chicken & Spinach Dinner
Ingredients
1/4 cup Kraft Signature Roasted Red Pepper with Parmesan Dressing
1 lb. (450 g) boneless skinless chicken breasts, cut into strips
1 can (10 fl oz/284 mL) 25%-less-sodium chicken broth
1-1/2 cups instant brown rice, uncooked
125 g (1/2 of 250-g pkg.) Philadelphia Light Brick Cream Cheese Spread, cubed
6 oz. (170 g) baby spinach leaves (8 cups packed leaves)
1 large tomato, chopped
2 Tbsp. Kraft 100% Parmesan Light Grated Cheese
Instructions
Heat dressing in large deep skillet or Dutch oven on medium-high heat. 
Add chicken; cook 5 min. 
Add broth; bring to boil. 
Stir in rice; return to boil. Cover; simmer on medium heat 5 min.
Add cream cheese; cook, uncovered, until completely melted, stirring occasionally. 
Add spinach (skillet will be full); cover. Cook 2 min. or until spinach is wilted; stir gently.
Remove from heat. Let stand, covered, 5 min. Stir in tomatoes; sprinkle with Parmesan.

Day 20 - a hobby of yours

Again, I have a few, and they are interchangeable for me according to season or mood.
I love to read, and especially like to visit old libraries. The smell of old books makes me imagine the world about to delve into when I open the book I chose.
I love photography. I love capturing life at it's funniest, best, silliest moments.
I love to do arts and crafts. Anything really, and I mostly enjoy doing it with other people.

Day 19 - a talent of yours

I can sing (I pretty much spent all my time on stage until the age of 20)
I can skate (not as well anymore, but I used to figure skate and am told I was fairly good at it)
I can Photograph..(See my stuff at www.enlumere.ca)
I can cook / bake / Grill etc.. and am told I am alright at that..
I am a talented shopper.. ask my husband (and Visa)!
I have a few other talents - but these are my best ones :)

Day 18 - Our wedding

Our wedding was beautiful, and if I was the kind of person that actually had fantasies about that day - I would say it went precisely as I would fantasize.
We were married at Atlantis on Paradise Island in the Bahamas.
Our destination wedding let us really enjoy our day, take time to be with our guests, and take it all in.
What I remember most about that day is all the moments I got to stop and actually look around.
Realizing the magic of our wedding day, on our actual wedding day is a special experience I wish every couple to have.

I remember these moments as clearly as if it was yesterday.

What a loss we have all suffered in losing such a dreamer.

But if you ask my husband, I am pretty sure his answers will be that my OCD is how to fold towels..

A holiday gesture

Holidays are coming by swiftly and I was inspired today with a story from a friend.
Someone she knows teaches at an elementary school with many students who live in poverty and often come to school with no warm clothes, no food, etc.
It has been getting colder and one of her 2nd graders shared with her today that she has been worried about a boy at her bus stop. The little girl said the boy looked cold and she asked if he had a coat. He said that he didn't have one so the little girl saved her own money to buy him one this weekend - no adults were involved.
This made me think about how privileged I am to have a home, food on my table, a loving family and friends.
This year for Christmas I would like to ‘pay-it-forward’.
I propose to all my friends, and all you other readers to change the usual gift buying marathon into a new tradition.
What I am proposing is a "service exchange".
Play ‘secret-santa’ with your closest. The person you are secret Santa for will choose 3 Charity activities (these will be on the note with their name).
You then do the activity and give the person you chose a letter and/or photos of your activity as well as something you liked and/or learned from it.
I think this will give the double benefit of:
  1. It will feel better then to exchange gifts you may not really need
  2. It will do something good for another human being
  3. It will inspire others to follow in your footsteps

I hope you can join me in doing good this year.

Day 4 - your favorite book

Who came up with these questions??
If you remember my post A Saturday Surprise, you'll recall this photo.
behind me there, that's my library.
Those are all my favorite books, that I read fell in love with and decided to buy.


I also go to the library at least once every other week and return with at least 2 books - how could I choose a favorite?
Hhhmmmmmmmmmmmmmmmmmmm....
alright, let's try this out..
I love love love Anne Rice books - back when vampires were not yet sparkly and could walk in the sun (See twilight), and before she went all Christian and stopped writing about anyone but Jesus (Her books are on the bottom right near my hip there).
For light reading I loved the Shopaholic series (it's on the top shelf there in the middle).
I also love reading true crime books, as well as history and biographical novels.
Bronte Sisters are a classic to me, and I believe I read everything by them.
And finally, in Hebrew I love authors like Irit Linur(עירית לינור), and Oren Ram (רם אורן).
